Finally something close to Sumer has arrived in London! So I a started looking for delicious, refreshing, nutritious treats and thank god I discovered nice creams:Nice creams are simply AMAZING because they taste and look like like ice creams but without the sugar and milk (yes the impossible made possible)! I created those two varieties which I then used to top my pancakes.
Banana Chocolate Nice Cream
Mix in a food processor until smooth:
– 2 frozen bananas
– 1tbs almond butter
– 1 date
– 1tsp raw cacao powder
Coconut Blueberry Nicecream
– 200gr coconut yoghurt
– a pack of blueberries
Mix in a food processor coconut yoghurt and blueberries and then freeze in a food container overnight. To smooth again mix the next morning in the food processor.
I add carob sauce at the end, which I have tons of and bring from Cyprus, and a handful of cacao nibs!
You can eat as a breakfast or dessert in its own, but this time I used it to top up pancakes and treat the friend I was hosting with a super breakfast!
