My little bundle of joy had his birthday! To celebrate his 4th birthday, I organised for him and his dog friends a birthday picnic at the park! Hank is extremely greedy and loves picnic blankets in the park as he has associated them with food, I therefore thought that the best celebration for him (and covid responsible of course) would be picnic with lots of treats and his friends. I made a birthday cake for him, with carrots and peanut better (you can get it wrong with beanutbutter for dogs, they all love pb) and a potato kefir frosting, together with some really tasty vegetable biscuits. Needless to say that the dogs devoured them, we didn’t dare to leave the cake out of our sight as all the pups would come for a lick of the delicious glaze. But I slightly adapted some of the ingredients. The dogs were super happy and content, hank loved his party and all in all it was a good day (though admittedly the weather could have been better as we got some drizzle in the afternoon). I used human grade ingredients for the recipes so the treats were super healthy and good for dogs. Just a point of caution: make sure to READ THE PEANUT BUTTER LABEL TO MAKE SURE IT DOESN’T CONTAIN ANY XYLITON WHICH IS TOXIC FOR DOGS! I was really positively surprised by the yoghurt ( I used kefir instead) potato frosting as the consistency was similar to buttercream and the dogs loved the taste!
Ingredients
For the cake
- 2 eggs
- ½ cup peanut butter (make sure there is NO XYLITOL in there)
- ¼ cup coconut oil
- 2/3 cup water
- 2 large carrots, shredded
- 2 cups wholemeal flour ( I used buckwheat, but you could substitute with all purpose flour)
- 2,5 tsp baking powder
For the frosting
- 600grs white potatoes, peeled and boiled, cut into chunks
- ¾ cup Greek yoghurt or kefir
Preparation
- Preheat the oven to 180C
- Grease your tray with coconut oil
- Whisky together the eggs, peanut butter, coconut oil and water.
- Stir in the shredded carrots, add the flour and baking powder and stir until just combined
- Pour the batter in the baking tray and bake for 25 mins
For the frosting:
- Boil the potatoes in water until very soft.
- Whip potatoes and yoghurt/kefir with an electric beater until as fluffy and smooth as possible. Add a little water to reach a buttercream consistency.
- Spread onto the cake while the frosting is still warm
- You can decorate with some dog training treats (I wrote Hank name with them)
- Set to cool in the fridge for at least 4 hrs.
