This is a very easy, fast and tasty summer salad, rich in fibre and protein. Black eyed peas are a good source of Vitamin B that is essential for producing energy in mitochondria and supporting the nervous system. Black eyed peas are also superior than all other legumes in folic acid content, which is a necessary vitamin not only during pregnancy but on a continuous basis as it is needed for DNA synthesis and cell proliferation. In this salad they are combined with colourful peppers for their Vitamin C, and a delicious tahini sauce. You will enjoy the black-eyed peas like never before.
Ingredients (for 2 people)
– 1 cup of boiled black-eyed peas
– ½ cup of boiled quinoa
– 1 red, 1 green and 1 yellow pepper cut into cubes
¼ cucumber, cut into cubes
– A little fresh coriander or parsley for garnish
For the sauce:
– 2 spoons of tahini
– 1 spoon of olive oil
– 1 tsp of sweet honey
– Juice of 1 lemon
– Salt and pepper
– 3 spoons of boiling water
Stir all ingredients for the salad in a large bowl. Mix the sauce ingredients and add the spoons of boiled water to add some taste to the sauce. Pour the sauce on the salad and mix.
