Buddha bowls are great for those moments that you want something filling but haven’t got the time for it. It is not really a recipe but more of a dinner/ lunch idea.
A Buddha bowl is a combination of a lightly-seasoned grain (brown rice, quinoa, etc) and a random mix of finely chopped vegetables, with everything tossed together in one bowl. It doesn’t matter which veggies you use, or whether they’re cooked or raw. It is probably the most nutritionally-balanced meal in the universe, with the perfect blend of carbs, protein, fat, and micronutrients. Like, you could eat it at every meal for the rest of your life and only get healthier by the day. So here is a simple Buddha bowl recipe.
Ingredients (1 person):
– 1/4 cup quinoa, brown rice or buckwheat
– 1/4 cup chickpeas
– 1 portobello mushroom chopped in small pieces
– 50gr sundried tomatoes
-1 avocado
-50gr sauerkraut (fermented sour cabbage)
-olive oil
-herbs (I used za’atar), salt & pepper
Cook the grains and chickpeas if needed (1/4 cup grains with 3/4 cup water). Chop the vegetables in small pieces and mix altogether when cooked. Top with olive oil and seasonings.
