If you follow my instagram stories you might have seen my story on the fabulous new yoga studio Avra Yoga, which my friend Maria opened at Melissia. Personally I feel excited to be prating again live in a real yoga studio with real people (and adjustments) and not online anymore, esp when is just round my house corner! So I though I might make something sweet and delicious to wish them a good start and what’s more fit to a yoga studio than delicious protein bliss balls, to give us some energy post practice? Since today is the autumn equinox, the inspiration for this recipe came from one of my favourite autumnal cakes, the carrot cake. So I mixed some carrots and cinnamon with the dates and almonds of the base and rolled the balls in desiccated coconut to resemble the white icing of the cake. They are super easy to make and only need 5 ingredients and a powerful food processor.
Ingredients (for around 25 balls)
-250grs of medjoul dates
-200grs raw almonds
-4 big grated carrots
-1 tsp cinnamon
- 1-2 drops vanilla essence (optional)
- 1/2 cup dessicated coconut
Preparation
– Strain the carrots in a nut milk bag to remove excess water
- Grind the almonds in a food processor just before it reaches a thin/ flour like consistency
- Add the dates in the food processor and keep grinding.
- Add the grated carrot, cinnamon and vanilla essence (if using) and keep grinding in the food processor to make soft amorphous ball paste.
- If the paste is too warm and soft let it cool/ thicken in the fridge.
- Take a portion equivalent to one tsp of the paste and roll in your hands to make really small balls.
- Coat the balls in desiccated coconut and leave in the fridge to thicken for 1-2 hrs though you could eat immediately.
