This is another recipe from Good Life Eatery for an incredibly delicious and nutritious breakfast. It’s a pudding with chia seeds in a rich cashew cream, served with blueberries and a delicious cashew vanilla butter. The difference lies in cashew cream which gives a much richer, creamy texture than vegetable milk. This breakfast with cashews, linseed and seeds is rich in all the good fat your body needs in the day. You can make 2-3 jars and keep them in the fridge for the whole week, garnishing in the morning with what will keep you happy!
Ingredients (for 2 bowls)
– 100gr cashews
– 250ml of water
– 1 spoon of honey or maple syrup
– 1 spoon of coconut oil
– ½ tsp of vanilla extract
– ½ tsp of cinnamon
– 1 spoon of flaxseed powder
– 3 spoon of chia seeds
For the garnish
– Strawberries or blackberries
– Vanilla cashews butter or almond butter
Preparation
Soak the cashews in a mug of water for at least 4 hours.
Empty the water in a bowl and stir with honey, coconut oil, cinnamon, vanilla and linseed and mix well.
Drain the cashews, place them in a food processor or blender, add the water with the remaining ingredients, and blend well until a cream is formed.
Empty the mixture in bowls, add the seeds and stir them.
Put the bowls in the refrigerator and leave them there for an hour (ideally all night).
Serve with fruit and butter.
