Don’t judge by the photo which is just showing the carrot. Normally, this salad is colourful with the yellow and red peppers mixed with carrots. Rich in vitamin A and C and a bunch of phytonutrient elements as evidenced by its intense colours, it’s what you need for shiny skin and healthy eyes. Vitamin A from carrots and especially vitamin C from peppers, orange juice and lemon juice are essential for the creation of collagen that keeps skin tissues supple. A similar salad is sold at my college’s canteen and it’s my lunch every weekend. It is so cool and tasty that I decided to try making it at home. It’s particularly easy, and the magic is hidden in citrus and turmeric. Generally, I’ve started appreciating light, non-greasy salad dressings that amplify the flavour of vegetables.
