The perfect recipe for home-made gazpachos: Gazpachos is a traditional soup from Spain. It’s a cold, somewhat thick tomato-based soup, which is very common in summer in warm Andalusia as a refreshing dish. It’s made with tomatoes, garlic, olive oil and vinegar, to which sometimes bread is added. To make this delicious soup even more nutritious, you can substitute the bread with chickpeas. Its taste is incredible and will become a favourite dinner dish for hot summer evenings.
Ingredients (for 2 persons)
-500gr of fresh tomatoes (the riper the better)
-200gr cooked chickpeas
– 4 cloves of garlic
-1/2 tsp of paprika
– salt, pepper and oregano
Preparation
Put the tomatoes, garlic and chickpeas in a container, sprinkle with some olive oil, salt pepper, paprika and oregano and bake in the oven at 180 degrees for about 1 hour.
Put all the ingredients in the food processor or blender along with 2 ice cubes and blend until they are mushed.
Serve with fresh basil.
