Everyone loves a breakfast with chocolate, no? You are gonna love this warm breakfast with coconut milk, quinoa and raw cacao. Only those three ingredients and the fried split banana on top which compliments perfectly the taste!if you are organised enough to do some batch cooking over the weekend and have the quinoa pre-cooked this can become a favourite quick and easy to prepare weekday breakfast! And more importantly it can be stored in a jam jar and transported to work so that you can enjoy the most delicious breakfast under the jealous looks of your work colleagues.
Ingredients (for 2 small jam jars)
-1/2 cup of quinoa
– 1 tsp of coconut oil
-3/4 cup coconut milk
-1 tbs raw cacao
-1-2 tbs coconut sugar
-1/2 tsp maca powder (optional)
For the garnish:
-1 banana cut horizontally in halves
– a few pomegranate seeds
-toasted coconut chips
-1 tbsp cacao nibs
-1 tsp cinnamon
-1 tbsp almond butter
Boil the quinoa with the coconut oil, milk, cacao and coconut sugar in a medium pot for 3-5 minutes until all the milk is absorbed.
While the quinoa boils saute the banana in the coconut oil until both sides turn golden brown.
Serve the quinoa in a short glass and garnish with the fried banana halves and sprinkle with the toppings of your preference.
