I only have 5-minute recipes to post this week, because I have exams on Saturday and I’m busy studying. For some inexplicable reason, it’s summer with 30 degrees in London, so I try to make light and cool dishes. There’s nothing more refreshing than this: cold soup with avocado, cucumber and lemons. In addition to being incredibly nutritious, it’s also extremely delicious!
For 2 dishes
– 2 avocados
– 2 large cucumbers
– 3 limes
– 3 cloves of garlic
– 1 tsp of cumin
– 1 tsp of salt
– ½ tsp of chilli seeds
Sunflower seeds and pumpkin seeds for garnish.
Put all ingredients in the food processor or blender and blend until they get a creamy texture. Let it cool in the refrigerator for 20 minutes and serve with the seeds and a few pieces of chilli.
