
Unfortunately in the photo you can only see the carrots but normally, this salad is colourful with the yellow and red peppers mixed with carrots. Rich in vitamin A and C and a bunch of phytonutrient elements as evidenced by its intense colours, it’s what you need for radiant skin and healthy eyes. Vitamin A from carrots and especially vitamin C from peppers, orange juice and lemon juice are essential for the creation of collagen that keeps skin tissues supple. A similar salad is sold at my college’s canteen and it’s my lunch every weekend. It is so cool and tasty that I decided to try making it at home. It’s particularly easy, and the magic is hidden in citrus and turmeric.Generally, I’ve started appreciating light salad dressings that amplify the flavour of vegetables.
Ingredients for 4people
– 2 carrots
– 2 yellow peppers
– 2 red peppers
– 1 red onion, grated
– 5 cherry tomatoes,cut in the middle
– A handful of fresh coriander
– 1 handful of almondflakes (in slices)
For the sauce
– 2 spoons of oliveoil
– Juice of 1 orange
– Juice of 1 lemon
– 1 tsp of turmeric
– ½ tsp of sweetpaprika
– ½ tsp of sweetcumin
Preparation
Cut all vegetables(carrot, peppers and onion) into thin slices using a grater or spiralizer. Stir the sauce ingredients in a cup with a spoon.
Mix the vegetables in a large salad bowl, garnish with a few coriander leaves and almonds and pour the sauce.
