I made this recipe for Noah’s 2nd birthday party, and when mums and kids tasted it I could hear them exclaim in awe about how tasty it was! The chocolate coating with peanut butter and coconut oil is incredibly enjoyable. Those who are loyal to the blog can recognise it by the chocolate bites recipe. The quinoa pop gives a crisp texture to this sweet and it’s very easy to make alone at home: they are made like popcorn, you put some quinoa in a pot, close the lid, raise the temperature and they start to pop, surrounded by a white soft membrane similar to that of popcorn. You can make them as Easter treats to convince your children to reduce chocolate consumption. There are raspberries in the picture because I didn’t have any egg yolks, but you can put small Easter eggs on the nests where I put raspberries. It’s so delicious and I’m sure your kids will eat the nests and they’ll never deal with chocolate eggs.
Ingredients (for about 12 pieces)
1/2 cup of coconut oil
-1/2 cup peanut butter
-1/2 cup of vegetable milk
-4 spoons of maple syrup
-1/4 cup of raw cocoa powder
– 1 tsp of vanilla
-1/2 tsp of salt
– 1.5 cup of quinoa
-1 handful of chopped cranberry
-12 small chocolate eggs
Preparation
For the quinoa pops: put the quinoa in a large pot, close the lid and raise the fire to high temperature. In about 3-5 minutes, you will hear them popping. Continue with the lid closed
Melt the coconut oil, peanut butter, maple, cocoa, salt and vanilla on medium heat in a coffee pot for about 4 minutes, stirring well to dissolve the ingredients. After you turn off the heat add the vanilla extract.
Add greaseproof paper on a large tray.
Put the quinoa pops in a bowl of and sprinkle them with the chocolate sauce – peanut butter.
Take spoon sized portions of the mixture and place them on the tray, pressing them gently to take an oval shape, and then press the top with a small teaspoon to make a dent (and place the chocolate eggs on it)
Refrigerate for at least 2 hours.
