Energy balls is my new fixation! They are such a wholesome and great alternative to chocolate and all sorts of unhealthy afternoon pick me ups. Michalis, my husband, was running a marathon in Reading this weekend- it’s a totally insane whole weekend run: they are running as a group for 24hrs (yes, you read right) trying to sum up as many miles as possible. That also involves camping and having to wake up at 4 am to do his slot to run among sleeping zombies. Definitely not my type of thing but he is a running addict so totally admire his dedication. So to support the cause and his team I prepared these energy bites with bananas and dates. I played around with a deliciously Ella recipe by weighting up the Maca to give extra energy and stamina. Ingredients (makes around 15 balls)
– 1 cup of almonds
– 1 cup of medjool dates
– 1 over-ripe banana
– 1/4 a cup of ground flaxseed
– 2 tablespoons of maca
– 2 tablespoons of chia seeds
The recipe is extremely simple and fast to make: start by grounding the almonds in the food processor and then start adding the dates, banana and the rest of the ingredients. When the dough starts getting sticky start rolling in small balls.
To make them a bit more indulging for the eyes and add extra deliciousness and goodness I coated half with raw cocoa, and the rest with godji berries and chia seeds. You can refrigerate or eat on the spot.
