Following on with my soup series for this lockdown…. The frost has hit Greece as well this week, so everything is covered in white which is beautiful and makes me think of one thing only.. sipping to a hot, warming soup while I watch the white landscape from my window.
This soup is full of green antioxidant goodness: peas, spinach, brocolli and some fresh mint.
Ingredients (for 2 portions)
- 1 cup frozen peas
- 1 handful brocoli florets
- 1 potato, cut in chunks
- 2 spring onions, chopped
- 1 handful of spinach
- 1 leek, chopped
- 1 carrot, chopped
- 1 handful fresh mint, chopped
- 1 cup almond milk
- 1 lts home made veg broth or 1 bouillon/cube diluted in 1 its of water
- 1 tbs olive oil
- Salt & pepper to taste
Preparation
- sauté in the olive oil the onion and leek until tranluscent, and then add the rest of the veg
- Saute the veg on medium heat for around 2-3 mins and then add the broth or bouillon water
- Close the lid and simmer in medium fire for around 30mins, until tender
- Add the fresh mint towards the end of the boil and salt & pepper to taste
- Blitz the vegetables with a hand blender and add the almond milk to reach your ideal consistency.
