I know no one is going crave kale. Nor will I try to convince you that kale is the most delicious thing you’ve eaten. Nor that these chips are more delicious than potato chips (although I honestly admit that for me they are!). I’ll try to convince you that kale is probably the most nutritious vegetable that exists and that it’s worth to consume it more often. Firstly, kale is the richest natural source of vitamin K, which has an anti-inflammatory action in the body. It’s also a much richer source of calcium than cow’s milk (100gr of kale have 135mg of calcium, while the corresponding milk ratio is 113mg) and is absorbed much easier by the body. It’s also particularly rich in vitamin C; 100gr of kale give 1.5 times the recommended daily amount of vitamin C for us women. Researchers have discovered about 45 different species of flavonoids in kale that have antioxidant and anti-inflammatory activities. Hence, the preaching that’s been happening in recent years about kale is absolutely justified. All in all, to get the rich benefits of cruciferous vegetables (where kale belongs) in our diet we should eat about 5 cups a week. For me the easiest way to put more kale in my diet is through salads and these delicious chips. They need about 10 minutes to be prepared and are so delicious that they really allow you to consume much more than you would eat in a salad. It’s the healthiest snack for when you’re on the couch with a good book or watching a good movie. I have two recipes for kale chips. The first one has a highly cheesy flavour thanks to the nutritional yeast, while the second one with sesame oil and tamari sauce is an Asian, more exotic version. Whatever you choose, they will make you not frown next time you hear about kale!
Ingredients
For kale chips with nutritional yeast
– 100gr of kale cut into small pieces
– 1 spoon of olive oil
– 1 spoon of nutritious yeast
– 1 tsp of garlic salt or dried garlic powder
– ½ tsp of spicy paprika
For kale chips with tamari and sesame oil
– 100gr of kale, cut into small pieces
– 1 spoon of sesame oil
– 1 spoon of tamari
– 1 x spoon of black sesame
Preparation
– Preheat the oven at 180 degrees
– Wash the kale and dry it well in a towel so that it does not have any water. It is important to dry it well to get crispier crisps.
– Lay the kale in a container and pour over the spices and oil
– Bake in the oven for about 15 minutes, until just before they begin to dry and get a golden colour.
