Marina is one of my mums best friends and a very special person, something like a eecond mum to me. She is the provider of all the exotic fruits (mangoes, dragonfruit, passion fruit, guarana) thet I occasionally post on my insta when in Cyprus. So upon my arrival to Cyprus she will welcome me with my favourite local dish which she deliciously cooks: stuffed zucchini flowers. And whenever she does that she might also bake this super tasty pasty- less zucchini pie, which will normally be devoured once it gets out from the oven. It was a matter of time I got my hands on her special recipe as it is super tasty, very easy and quite healthy too without all the flour and pastry (ideal for the celiacs or those in kept, wanting to avoid grains. To be frank, although my take on Marinas pita was very tasty and there were no leftovers, I think it didn’t reach to the levels of Marina’s original pie.. I blame it on the greek zucchinis which are completely different to the Cypriots ones. The Cypriots are double the size, slightly more yellow and very much sweeter. Honestly they taste like a completely different vegetable and I always try to bring on or two when I am travelling back… Nonetheless it is still delish, super easy and quite light and healthy too so give it a try.
Ingredients:
- 6 medium zucchinis, grated
- 4 fresh onions, sliced or a grated dry onion
- 4 eggs
- A fistful of fresh mint, chopped
- 1tbs dry mint
- 1 tbs chopped parsley
- 1 tbs chopped dill
- 4-5 tbs flour or bread crumbs (I chopped 5 French toasts in the food professor) . You can try buckwheat flour for a gluten free version. You may need to add more in order to ensure that all the liquids are absorbed
- 200grs feta cheese
- Olive oil
- Salt & pepper to taste
Preparation
- Pre heat the oven at 180C
- Grate the zucchinis and place in a sieve,
- Add some salt and drain the excess water by pressing with your hands.
- In a large bowl, add the zucchinis, chopped herbs, the eggs. Salt & pepper, a bit of olive oil and mix well with a spoon
- Add the flour or toast crumbs and mix again. You may need to add additional flour/ bread crumbs until all the liquids have been absorbed.
- Oil a tin and place the mixture in the tin by spreading evenly with a spoon.
- Bake in the oven at 180c for around 45 mins until the pie turns golden. Halfway the baking, oil the surface with some extra oil.
