This recipe is a great idea for a quick, easy and healthy dinner. You will be surprised by how cauliflower reminds of rice in taste & texture (but is way more nutritious) and is a great way to surprise your guests at a dinner party.
Ingredients
-1 cauliflower
-1tbs pistachios, flaked almonds or pumpkin seeds
-1 bts oil
-1 medium onion, chopped
-1tsp ground turmeric
-2 bay leaves
-3 cardamon pods
-1tbs raisins
-2tbs water
-1tsp lemon juice
Grate the cauliflower in a food processor into rice sized pieces. Gently toast the pistachios or almonds in dry pan for a minute and then set aside. In the same pan turn up the heat, add the oil and fry up the onion, turmeric, bay leaves and crushed cardamom pods for 8mins or until the onion is soft and transculent. Stir occasionally to prevent from sticking. Add the grated cauliflower, raisins and water, stir and cover the pan leaving the cauliflower to steam for 4-6mins until tender. Once the cauliflower is tender, season with salt and pepper and stir some lemon juice.
