Here’s a nice breakfast idea for those who got bored of breakfast oats and want a change in their warm breakfasts. We tried this recipe in Bali and it was one of our favourite breakfasts. Its herbal aromas excite you from the first bite, and don’t hesitate to add rose water. If you are hesitant, try half the quantity. Rose water gives originality to the taste and fits perfectly with peanut, raisins and roasted almonds. It’s also very easy to make, and you don’t even need a casserole for the couscous as you just soak it in hot water for 10 minutes. It’s not suitable for those who suffer from celiac disease because it includes gluten. Nevertheless, it’s a very nutritious cereal rich in fibre.
Ingredients for 2 bowls
-200gr of couscous
– 400ml of hot water
-30gr of raisins, soaked in water for at least an hour
-30gr slices of almond
-30gr of pistachio nuts, finely chopped
– 1 stick of cinnamon or half a tsp of grated cinnamon
-1 tsp of rose water
-2 spoons of honey
1 cup of boiled almond milk
Preparation
Put the couscous in a deep bowl and fill it with very hot water and rose water until it covers almost all of the couscous. Read the manufacturer’s instructions for the ideal water ratio, but it’s usually 2 to 1. Cover the dish with another shallow dish and let it rest for 10 minutes until all water is absorbed. Stir with a fork. While you wait, roast the almonds in a frying pan for about 2 minutes until they are browned but not burnt. At the same time, boil coconut milk with a cinnamon stick and honey for 2-3 minutes. Add some milk to the couscous, start with half the amount, and garnish with roasted almonds, chopped pistachios and drained raisins.
