Ingredients (for 2 servings)
For the matcha parfait
– 4 tablespoons of yogurt (coconut, soy or whatever you ve got available)
-2 tsp of Matcha Maiden
– 1 spoon of maple syrup
-1/2 tsp of vanilla extract
For the layers in between:
– 4 spoons of oats or granola
For garnish: coconut chips, forest fruits (strawberries, raspberries, or cranberries), cacao nibs, pumpkin seeds or anything else you like
Preparation
Blend all the parfait ingredients in the multi or the food processor until they are well blended and they turn into a cream with a light green colour.
Spread a layer of 2 spoons of oatmeal or granola in a relatively short glass. For the next layer, spread about 2 spoons of parfait. Continue with a layer of oats and then parfait once more. Garnish with a few fruits cut into smaller pieces and toppings of your choice.
