This is one of those breakfast recipes that are so delicious, you feel somewhat guilty for eating something so delicious for breakfast. The parfait is Coyo coconut yoghurt, which is my favourite coconut yoghurt, but you can make it with any yogurt you find, I’m sure that soy yoghurt or Greek yogurt will be equally delicious. Just be aware to get them unsweetened. Parfait has a soft velvety texture and the taste is incredible. In the layers in between I used plain oats, but I think the ideal combination would be with matcha kaleola that you will find in the blog, but unfortunately, I didn’t have any. Try any other granola you have at home. I decorated it with raspberries and coconut chips, but sunflower or pumpkin seeds and cacao nibs would also do. I’m sure it will become one of your favourite breakfasts and maybe even dessert.
Ingredients (for 2 servings)
For the matcha parfait
– 4 spoons of yogurt (coconut, soy or sheep)
-2 tsp of Matcha Maiden
– 1 spoon of maple syrup
-1/2 tsp of vanilla extract
For the layers in between:
– 4 spoons of oats or granola
For garnish: coconut chips, forest fruits (strawberries, raspberries, or cranberries), cacao nibs, pumpkin seeds or anything else you like
Preparation
Blend all the parfait ingredients in the multi or the food processor until they are well blended and they turn into a cream with a light green colour.
Spread a layer of 2 tbspoons of oatmeal or granola in a relatively short glass. For the next layer, spread about 2 spoons of parfait. Continue with a layer of oats and then parfait once more. Garnish with a few fruits cut into smaller pieces and toppings of your choice.
