How is it possible to resist those bars that combine two of my favourite superfoods, tahini and matcha? They have matcha’s tea like taste and the taste of sesame, while dried fruits (I added dates and raisins) in combination with brown rice syrup add the perfect sweetness. They are incredibly rich in calcium and antioxidants, they are the best snack for 11 or 4 o’clock, they are enjoyable and satiating at the same time! Their green colour comes from matcha and pumpkin seeds, which are a good source of protein, vitamin E (which is healthy for skin) and vitamin B. If you don’t have any matcha, you can replace it with another superfood (e.g. cacao, maca or dates). I’m expecting to hear your alternations!
Ingredients (for about 12 bars)
– 200 gr oats
– 135 gr pumpkin seeds
– 200 gr almonds
– 1 bowl dried fruits (e.g. dates, raisins, goji berries, figs)
– ¼ tsp salt
– 2-3 spoons of matcha
– 80ml brown rice syrup or 40ml of maple syrup
– 45ml of maple syrup
– 125 ml tahini
– 2 spoons coconut oil
– 1 tsp vanilla extract
Preparation:
– Pre heat the oven at 170 degrees Celsius
– Put the almonds in the food processor until they break down to very small pieces.
– Cut the dried fruits into small pieces
– Put a small deep pan on low temperature and stir the tahini, rice syrup, maple syrup and vanilla extract for some minutes.
– Put all the dry ingredients in a big bowl and stir them well with all the liquids
– Spread a greaseproof paper on a pan and then spread the dough on it, pressing it well using a spatula. The dough needs to be at least 3 centimetre thick.
– Bake for about 20 minutes, and then take the pan out to use the spatula and straighten the surface before baking for 5 more minutes.
– Let it dry for about 20 minutes and then cut the dough in parallel bars with a sharp knife.
