Belated happy 2025 (I know its a bit overdue but hey.. at least its before Easter…). I am welcoming 2025 for the blog with a really tasty recipe for homemade granola.
A jar of this delicious granola was gifted to me by my beloved friend Nick and since then it has found a permanent place in my breakfasts. I add it daily on my yoghurt/ porridge together with a sliced banana and a handful of blueberries and I dare to say that this breakie has replaced my dear smoothies (at least now in winter)… its so delicious that naturally I end up snacking it with a teaspoon throughout the day when I need some energy. I think that the secret behind the taste is in the combination of desiccated coconut and cinnamon which gives its sweetness. Its mainly a combination of steel cut oats (who are lower in glycemic index than than oat flakes), nuts and seeds all of which are a great source of fibre. This recipe has two cholesterol lowering ingredients so it can support cardiovascular health: oats is one of those as according to research daily consumption of oats (even in small quantities of 3ml) may help reduce cholesterol levels and esp. ‘bad’ LDL cholesterol levels by 10%. The other cholesterol lowering ingredient is pistachio nuts. So this recipe is a delicious way to add both in your daily routine.
Ingredients (for a large jar, approx 15 portions)
-200grs dessicated coconut
- 200grs still cut oats
- 100 grs sunflower seeds
- 100 grs pumpkin seeds
- 100grs linseeds
- 100grs slivered almonds
- 100grs pistachio nuts
- 100grs coconut chips
- 2 tbsp ground cinnamon
- 3tsp ground nutmeg
- 100grs honey or maple syrup
- mix in a big bowl the nuts, oats, coconut and seeds. Sprinkle on top the spices (cinnamon and nutmeg) and the honey. Mix well again with a spoon.
- Lay the mixture on a spacious flat lined tray and bake for approx 15 mins at 150C. You know its ready when it starts getting gold and fragrant.
