I recently started reading Udo Erasmus book “Fats that Heal, Fats that kill”. This is a very thorough study on the role of Essential Fatty Acids (EFA’s) in preventing cardiovascular and other degenerative diseases. The key take out is that more than quantity, what matters is the balance between Ω3 and Ω6 EFA’s in our nutrition. Since Ω6 is much easier to find in food (and esp. in a greek diet) we usually supercharge our bodies with Ω6 at the dispense of Ω3 which are found in smaller quantities in foods. Rich dietary sources of Ω3 is flaxseed and hemp seed oil, avocaodo, salmon, eggs, pumpkin seeds etc. Though I love virgin olive oil and use it in almost all of my recipes, I’ve discovered that there are richer and better balanced oils. What a shock for a Greek! So I decided to give a try at Udo’s choice which is supposed to have the best balance of Ω3, Ω6 and Ω9. This recipe is a fresh, summary salad with black eyed peas which are an excellent source of potassium (a mineral critical for the proper function of all cells, tissues and organs in the body) topped with Udo’s choice miracle oil! Ingredients for two people: – 1 cup of black eyed peas -1 red, 1 yellow and 1 green pepper -a handful of parsley -1oogrs sundried tomatoes -1 red onion -2tbs Udo’s choice or olive oil -1tbs tahini -2tbs vinegar Boil the black eyed peas with 2 cups of water. In the meantime chop in small cubes the vegetables and prepare the sauce by mixing together oil, vinegar and tahini. Mix everything together and Enjoy!
