One of the things I really enjoy with the lockdown is that I finally found the time (and the mood) again to start preparing more “elevated” breakfast pots. Because truth to be told, when I have to go to the office I default to a green smoothie for breakfast. And smoothies are not bad, but they are not as indulging as a breakfast pot full of fruit and different garnishes. Lately I ve also started doing this: I smash some berries in a pestle and mortar, making a deliciously fruity and natural compote that I mix with the milk used to soak my chia seeds & oats, which feels like a naturally flavoured milk. This compote offers not only the taste of the fruit at hand, but also its colour (this is a great idea by the way, for the mums among us, if you are not already do it as it’s a clever “cheat” to the ready made flavoured milks and yoghurts, minus the preservatives and artifiicial flavourings). if you prepare this in a jam jar and let to soak overnight you could also take at work with you!
Ingredients (for 1 small jar)
-2tbs oats
-3 tbs chia seeds
-1 cup plant based milk (I prefer coconunt milk)
– a handful of raspberries, blackberries or strawberries
-1/2 tsp ground cinnamon
To garnish
-3-4 extra berries, cut in slices
-a handful of coconut chips
-1tbs raw cacao nibs
– 1 tsp pumpkin seeds
– 1 tsp amond butter
- Smash the berries with a pestle & mortar (or a fork in a cup) to start forming a marmalade type of paste
- Put the chias & the oat in the jam jar, layer with the compote and then fill up the jar with the milk. Add the cinnamon and stir well with a spoon to combine all the ingredients.
- Put the lid on and rest in the fridge for minimum 8 hrs ( I usually do this overnight). You know it is ready when the chia seeds and oats have soaked all the milk and the mix starts having a hoghurt like viscosity.
- Garnish with the toppings of your choice and enjoy!
