I’ve got a great Paleo granola recipe for you, and for those who avoid wheat in their diet. It’s a great combination of almonds, cashews, coconut, a variety of seeds and goji berries, which will instantly make your breakfast and your smoothies so much tastier. This specific recipe is so delicious, I sometimes eat it as it is as an afternoon snack. It’s rich in protein, good fats, and a lot of vitamins and trace elements, making it a healthy way to start your day and stop that afternoon craving for a sweet. If you like the taste of coconut, you’ll love this recipe, since coconut predominates in it. I’d suggest you soak the nuts and seeds from the night before, to activate them and further increase their nutritional value, and allow them to be better absorbed from your body.
Ingredients
– 1 bowl of almonds (soaked in water overnight)
– 1 bowl cashew nuts (soaked in water overnight)
– 1/4 of a bowl pumpkin seeds
– 1/2 bowl of coconut flakes/ chips
– 1/4 bowl honey
– 1/4 bowl coconut oil
– 1/4 bowl goji berries
– 1 tsp vanilla extract
– 1/2 tsp salt
Preparation
– Preheat your oven at 180C. Add the cashews and the almonds into a food processor, and blend them until they break into smaller pieces.
– In a small pan, melt the coconut oil and add in the honey and vanilla extract
– Add all the ingredients except the goji berries into a medium-sized bowl and stir
– Spread the granola into a pyrex that’s been covered with grease, and bake in the oven for 20-25 minutes until it becomes slightly golden, stirring every five minutes so that it bakes evenly
– Add in the goji berries and the salt, and take it out of the oven and press with a spatula
– Let it cool for 20 minutes until it hardens
– Store in an airtight container in the fridge
