This recipe is dedicated to my good friends Nicholas and Emily who took me to this amazing cafe , Nomad Cafe in Limassol, where I tried this delicious peanut butter and blueberry breakfast chia pot which I tried to recreate at home. I have already talked about the importance of a protein packed breakfast: protein is the nutrient that offers satiety and also buffers blood sugar levels. If you are one of those people who crave a sugary treat in the afternoon try boosting your breakfast with protein to help you reduce the afternoon blood sugar surge. I find that breakfast, unless you have eggs, is the most difficult meal of the day to pack with protein thats why I normally supplement with a pea protein by Viologos which has a very neutral taste that cannot be tasted. Undoubtedly the hero of this breakfast is chia seeds which offer not only generous amounts of protein but also calcium, magnesium and fiber (this pot covers 50% of your daily fiber needs). Boosted with 1 tbs of pea protein powder this chia pot offers a generous amount of 28grs of protein, enough to keep you full till lunch or after a morning workout. The homemade blueberry jam (thawed frozen blueberries mixed with 1 tsp of honey) offers antioxidant anthocyanin and compliment perfectly the peanut buttery chia cream. Make overnight in order to enjoy a delicious fuss free breakfast that can also be taken with you at work.
Nutritional analysis: 542 kcals, 16 gr fibre, 28grs protein, 38.6 grs fat, 348mg calcium, 251mg magnesium.
Ingredients (for a small pot)
3 tbs chia seeds
1/2 a cup oat or coconut milk
1 tbs pea protein powder
1.5 tbs peanut butter
1/2 cup frozen blueberries
1tsp raw honey
1 tsp flaxseed or other seed of your choice (I.e. pumpkin seeds)
3 pieces of almonds, pistachios or other nuts of your choice to garnish
Preparation
- to make the blueberry jam: place the blueberries and the honey in a small pot and heat blending with a spoon and reach a jam consistency
- Place the chia seeds, peanut butter and milk in a mug, and stir well with a spoon. At this stage they will still have a watery consistency but they will thicken overnight.
- Place the jam at the bottom of a jar with a lid (if we want to take with us) and layer on top of the jam the pb chia mix.
- Place the lid and leave overnight (for at least 8 hrs) in the fridge to thicken.
- Garnish with seeds and nuts of your choice.
