Okay, I may have rushed a bit into spring as some of the ingredients of this recipe are not of this season, but you can save it for April when asparagus and peas will be blooming. This mousse is a very special dish that will impress your friends as it is has a very beautiful appearance and is the perfect appetizer. In addition, the fact that you don’t need to bake it but just have to throw all the ingredients in the food processor makes it very easy and practical. Easy, delicious and healthy? It ticks all boxes to be included on Saucha Life! Its taste is particularly light and delicate. I’m warning you that it has a strong taste of vegetables as it combines raw peas, asparagus, cauliflower and avocados, so if you don’t like the taste of vegetables I don’t recommend it to you. If you love greens, you will love it. Asparagus have tons of nutrients: vitamin B9, A, C, E, B12 and K as well as chromium, which helps insulin to transfer glucose to the cells. Asparagus is a natural anti-aging vegetable as it has a number of antioxidant elements (A, C) that neutralize free radicals and protect cells from oxidation (and therefore slow aging down). Both asparagus and avocado in this recipe are rich in glutathione, a detoxifying ingredient that breaks down carcinogens and other harmful compounds such as free radicals. In this way, they protect us from various forms of cancer. Asparagus is also a natural diuretic, helping the process of body detoxification. Ingredients (for 6-8 people)
-350gr of fresh asparagus
-1 ¼ cup of frozen peas
-1/2 cauliflower head
-1/2 onion
-4 avocados
-Juice from 2 limes
-1 handful of basil
-1 handful of mint or coriander
-¼ cup of olive oil
-½ tsp salt and some freshly grounded pepper
-Some rocket or other greenery for garnish
Preparation
– Blend the asparagus and peas in a large food processor until they turn into a cream.
– Add cauliflower that’s been cut into smaller bouquets and onion. Blend until they are mixed.
– Add the avocado flesh, lime juice, oil and fresh aromatics as well as salt and pepper and blend until all ingredients are homogenized and creamy.
– Fill round wine glasses with the mousse and turn them over to achieve a circular shape (unless you have a special mould)
– Garnish with a few greens.
