Is anyone here or are you all vacationing? After a long period of abstinence from the kitchen for health reasons, we came back stronger. At least for a few more days until we leave for vacations as well! The food of the day is a very easy and quick recipe from Deliciously Ellla’s new book: stuffed, delicious red peppers with mushrooms and pine nuts in a yummy tahini and lime sauce.
Ingredients (for 2 people)
2 red peppers
30gr of pine nuts
12 mushrooms
4 cloves of garlic
1 spoon of tahini
Juice from one lime
Preparation
Slice the peppers in the middle and remove the spores. In a tray with some olive oil, spread the peppers and add salt and pepper and bake in the oven for about 20 minutes. At the same time, roast the pine nuts for about 5 minutes until they turn golden brown in a pan, and cut the mushrooms and garlic into very small chunks. Cook the garlic with some olive oil and add the mushrooms with some salt and pepper and sauté them. Turn off the heat and mix the mushrooms with pine nuts, the lime juice and the tahini. Fill the peppers and put them in the oven for another 15 minutes.
