This mousse recipe will help in those occasions where you want a quick and easy sweet to treat your friends. It’s literally prepared in 10 minutes, and it tastes incredible. The secret ingredient is silen tofu that replaces cream and gives an extremely rich, velvety texture. The tofu is a soy derivative and is a complete source of protein. It’s also particularly rich in iron, calcium, manganese, selenium and phosphorus. I promise you that you won’t even identify it in the mousse, since its taste is particularly neutral, and it just makes wonders in the texture! However, you need to buy silken tofu and not simple tofu as their texture is very different. In this recipe, I added a little Bailey’s Pumpkin Spice, because I wanted to give a more festive flavour due to Halloween, but you can either skip it or replace it with a simple Bailey’s or rum.
Ingredients (for 6 glasses)
– 2 silken tofu packs
– 200gr of dark chocolate
– Half a cup of maple syrup
– 1 spoon of vanilla extract
– a sprinkle of chili flakes
– A pinch of salt
– 5 spoons of Bailey’s Pumpkin Spice (optional)
– Zest from one lime
– A handful of pistachios or walnuts for garnish
Preparation
– Melt the chocolate in bain marie.
– Drain the tofu in a towel until the water is gone.
– Put the tofu, vanilla extract, chili, salt, lemon zest and Bailey’s in a food processor (multi) and blend for a few minutes until it turns into a cream.
– Slowly add the melted chocolate and blend for another minute until it’s mixed well.
– Serve in small bowls or coffee cups.
– Crush the walnuts or pistachios in a pestle and sprinkle the mousse with them.
– Cool them in the refrigerator for about 20 minutes or eat them directly.
