A summery light salad recipe that I’m sure you’ll love: its best feature is the strawberry which gives a pleasantly sweet taste to spinach and quinoa. The sauce is a simple balsamic vinegar sauce with oil and garlic. You will be amazed at how strawberry matches with the balsamic vinegar! This salad is very easy and very quick to make. It’s also a balanced meal as you get protein from quinoa, good fats from the almonds, and a whole lot of vitamins and trace elements from spinach and strawberries.
Ingredients
– 100gr of fresh spinach
– ½ cup of cooked quinoa
– 6-8 strawberries, sliced
– 1 handful of fresh peppermint, finely chopped
– 1 handful of almonds
For the sauce:
– 3 spoons of balsamic vinegar
– 3 spoons of oil
– 1 clove of garlic, cut into very small chunks
Preparation
Boil the quinoa with twice the amount of water until it absorbs the water.
Crush the almonds into small pieces in a pestle.
At the same time, mix all sauce ingredients
In a large salad dish add spinach, quinoa, chopped peppermint, strawberries and almonds. Pour the balsamic.
