Finally, its strawberries season, now the they have come into season I use them everyday in my breakfast smoothies! This brekkie chia pot is another option to use strawberries, blended with chia seeds, dessicated coconut and coconut milk and soaked overnight to form a thick yoghurt like consistency. So you can go to sleep and the next morning eat a deliciously healthy breakfast! One of the reasons I love chia seeds is their rich nutritional profile: these tiny but fierce seeds pack lots of fibre, Omega3s, antioxidants magnesium, calcium and iron and they do wonders for gut motility and bone health, and also keep us satiated helping us eat less.
Ingredients (for one pot)
- 5 average sized strawberries
- 4tbs chia pots
- 3 tbs desiccated coconut
- Optionally: 1 tbs raw honey
- A couple of more strawberries, chias and coconut chips or nut butter of your choice to garnish
Preparation
– Blend in the food processor for one minute, all the ingredients. Place the blend in a pot and leave overnight to soak. Garnish with the toppings of your choice.
