This recipe is a really good reason to get out of bed on Sunday morning: a perfect ménage -a- trois of chocolate, coconut and strawberries giving a rich, decadent, utterly indulging breakfast.You will also be surprised with how easy it is to create your own chocolate sauce that you can use both in ice creams and pancakes.
Ingredients (for 2)
Pancake ingredients
-1/2 cup buckwheat flour
-1/4 cup coconut flour
-1tsp baking powder
-1/8 tsp salt
-3 tbs coconut oil
-1/2 cup almond or coconut milk
-2tbs water
-1tsp vanilla essence
-4 strawberries
Raw chocolate sauce
-3tbs coconut oil
-1tbs maple syrup
-2tbs cacao powder
-1tbs tahini
-1sp vanilla essence
6 strawberries to serve
Combine all of the pancake ingredients in a food processor and mix. Add water or extra coconut flour to reach to the right consistency- overall the batter should be quite thick. Heat a non-stick frying pan over medium heat and add a tbs of coconut oil. Pour 1tbs of the batter and wait until bubbles start appear on the surface of the pancake, then turn on the other side.
To make the chocolate sauce slightly heat the coconut oil in a small pan and add the rest of the ingredients. Garnish the pancakes with the fresh strawberries and pour the chocolate sauce. Welcome to paradise!
