Anyone else feeling the cold weather? This is a delish dish for this transitional automny weather when you want something delicious and nutritious to keep you warm and satiated. You know my love for sweet potatoes, their flavour is even more enhanced by the warm curry spices. This recipe, rich in vit A by the sweet potatoes is really helpful for skin conditions like acne or eczema. Creds go to the Medicinal Chef, a book I recently bought and really enjoy.
Ingredients for 3-4 serves
1 tbs olive oil
2 red onions, thinly sliced
2 large garlic cloves
1 tsp freshly grated ginger
2 green chilies, thinly sliced
1 tsp ground coriander
1 tsp ground cumin
1 tsp mustard seeds
1 tsp turmeric
800 gr sweet potatoes, diced
375ml vegetable stock
A handful of spinach
A large handful of fresh coriander leaves
1 tbs coconut or almond flakes
- Heat the olive oil in a large pan and add the onions, garlic, ginger chillies and the spices and cook for 4-5 mins until the spices start becoming fragrant.
- Add the diced sweet potato and stock and simmer for about 15-20 mins, until the sweet potato is soft
- Add the spinach leaves and season with salt. Once the spinach has wilted sprinkle with the coriander leaves and almonds/coconut flakes and serve in warm bowls.
