I’m sure we all have up in our sleeves two recipes that are easy, fast and made with ingredients you have in the cupboard, for one of those afternoons you come back from work feeling hungry and want to eat something delicious right away. This recipe is one of them for me: a delicious vegetable noodles dish with a Teriyaki sauce. Teriyaki has Japanese roots and is a mixture of soy, vinegar and sugar (in this case, honey). It’s used in stir fry dishes (those that are fried in wok) and gives an incredible taste. In this recipe I say I use whichever vegetables I had in the fridge, but the basics are mushrooms, broccoli and kale (or spinach). I also prefer to use buckwheat or soba noodles (you will find them in all organic stores) as buckwheat is a complete source of protein and is rich in vitamins B and antioxidants without gluten. So, within 15 minutes I have a delicious, healthy dinner prepared!
Ingredients for 2 people
-1 pack of buckwheat noodles (or any other noodles you have)
-1 broccoli
-1 red pepper
-2 large portobello mushrooms or a handful of small mushrooms
-2 cloves of garlic
-4 fresh onions
-1 handful of spinach or kale
-1 tsp of sesame (preferably black)
For the teriyaki sauce
-1/4 cup tamari sauce (or soy)
– 2 spoons of olive oil
– 1 spoon of sesame oil
– 1 spoon of honey
– juice from a lemon
-1 tsp of ginger cut into small pieces
Boil the noodles. If you decide to make buckwheat noodles, it’s very important to rinse them with plenty of cold water after boiling because otherwise they will stick.
Remove the ends of the broccoli and cut the rest into small pieces. Slice the mushrooms, pepper, garlic and onion. Cook garlic and onion in oil (olive oil or coconut) in a deep-frying pan (preferably in a wok), and then add broccoli, mushrooms and pepper and cook for about 5 minutes. While the vegetables are cooked, mix the sauce ingredients in a glass. Add the noodles to the pan and after 1-2 minutes add and mix all ingredients for about 5 minutes. In the last few minutes, add the spinach or kale and close the lid until all ingredients have absorbed the sauce. Serve by sprinkling the noodles with black sesame seeds.
