If you are a big breakfast lover you are probably well familiar with chia pots: they are tasty, really fast to make and extremely nutritious.
Actually it might be the most nutrient dense way to start your day since these tiny little grains have magical nutritional properties: to start with they area among the few complete non animal protein sources and are rich in antioxidants and fatty acids. A few numbers that blow my mind: a gram of chia seeds has 8 times more Ω3s than salmon, 6 x more calcium than milk, 6x more protein than kidney beans, 3x more iron than spinach, 15x more magnesium than broccoli, 2x more fiber than bran flakes! These are quite good reasons to add them more in your nutrition. This coconut chia recipe one is my favourite, I usually prepare the night before and take to work to enjoy after my morning practice!
Ingredients
1 cup of almond or coconut milk
4tbs of chia seeds
1 tbs honey or maple syrup
1tbs coconut butter (or oil)
1tsp vanilla essence
Fresh fruit for garnish- I usually love strawberries, goji berries, fig and blueberries and some extra desiccated coconut on top
Stir all the ingredients in a small pot (or food processor) and then add the chia seeds. Leave in the fridge overnight and garnish with fresh fruit in the morning!
