I had promised this recipe, when I posted its wintery version with beetroots. The summer version includes apricots instead of beatroots and it is simply divine! I could be eating this dish every single day (and I almost do). What I enjoy is that it is super easy to make as you put all the ingredients in a tray and grill in the oven for 12 mins, and just like that you have the most delicious warm salad, justifying the rule that the simplest the recipe and the ingredients, the tastiest it is. The magic ingredient are the apricots clearly which melt in the oven and liberate their juices giving to the crispy swiss chard and onion, a delightfully sweet & sour-ish taste. No other sauce added! Ingredients (for 2 people)
- 200grs swiss chart, cut in chunky pieces with your hands
- 1 red onion, sliced
- A handful of walnuts
- 4-5 apricots, sliced
- 2tbs olive oil
- Salt & pepper to taste
Preparation
- Preheat the grill while cutting the veggies
- Mix the chard,onion and apricots in a tray
- Sprinkle with the walnuts, olive oil and salt & pepper and toss
- Grill for 12mins, until the chards are crispy (be careful not to burn them though!)
